Job Summary:
We are seeking a highly capable and culturally aware General Manager to lead the operations of a Chinese live seafood restaurant. This role requires a deep understanding of Chinese cuisine, live seafood handling, and premium guest service. The ideal candidate will combine strong leadership, operational excellence, and cultural sensitivity to deliver an authentic and high-quality dining experience.
Key Responsibilities
- Manage daily operations of the restaurant, including FOH and BOH.
- Oversee live seafood procurement, tank management, and freshness control in line with Chinese culinary standards.
- Ensure kitchen and service teams maintain high standards of hygiene, safety, and presentation.
- Coordinate closely with chefs to ensure authentic preparation and presentation of Chinese seafood dishes.
- Hire, train, and supervise a diverse team of service staff, kitchen crew, and seafood handlers.
- Foster a respectful and performance-driven culture rooted in hospitality and teamwork.
- Lead pre-shift briefings and ongoing training on service style, product knowledge, and Chinese dining etiquette.
- Maintain a warm, professional environment that aligns with Chinese dining traditions (e.g., family-style service, banquet formats).
- Resolve customer issues promptly and maintain high guest satisfaction.
- Manage VIP and group dining experiences with attention to cultural expectations.
- Develop and manage budgets, control costs, and analyze financial performance.
- Track sales, inventory, and food costs, particularly high-value seafood items.
- Ensure all operations comply with local health regulations and food safety laws.
- Supervise cleanliness and maintenance of live seafood tanks and storage.
- Conduct regular audits on food quality, kitchen operations, and customer service.
Qualifications:
- 5+ years of experience as a General Manager or senior leadership role in a high-volume Chinese or seafood restaurant.
- Strong knowledge of live seafood operations, including tank systems and species handling.
- Familiarity with Chinese dining customs, banquet service, and menu styles.
- Excellent leadership, communication, and problem-solving skills.
- Fluent in English; Mandarin or Cantonese proficiency is a plus.
