Role
The Executive Chef will oversee the planning, execution, and supervision of the culinary operations across all areas of Amandari. You will ensure the highest level of service and culinary quality, working closely with the Food & Beverage Manager and other department heads to deliver outstanding dining experience for our guests. This is an exceptional opportunity for a creative and passionate culinary leader to join an iconic resort destination. This role reports directly to the General Manager
Responsibilities
Develop and manage the annual departmental operating budget in collaboration with the General Manager, Food & Beverage Manager, and Financial Controller.
Ensure adherence to the departmental budget, managing food costs, labor, and overall expenses.
Attend meetings and briefings with other department heads representing the culinary team.
Create attainable goals for staff development and growth, with a focus on promotion from within.
Guide the team’s training and development, fostering a positive learning environment and cross-training opportunities.
Ensure compliance with industry standards, trends, and legal regulations.
Minimize overtime and optimize staffing based on business demand.
Oversee the inventory process, ensuring accurate stock takes for all operating equipment and monitoring for breakages or losses.
Work with group organizers and guests to accommodate special dietary requests and cater to private functions.
Ensure minimal food and beverage wastage and maintain operational consistency with the Amandari Food Program.
Requirements
At least 5 years of previous culinary management experience in a multi-outlet environment, ideally in a luxury setting.
Strong knowledge of the dining room and kitchen operations, with a hands-on approach to kitchen management.
Proficiency in using Micros and other culinary management systems.
Flexibility in scheduling to meet operational demands.
Strong leadership and communication skills, with the ability to motivate and develop a high-performing team.
A creative and visionary approach to menu development and culinary execution.
High attention to detail and commitment to delivering excellence in every aspect of the culinary experience.
